Frozen Meat
When frozen, the molecular structure of meat changes, due to the formation of ice crystals within the meat itself.
Lester Newmanthal of South Oregon is a 'Molecular Gastronomist', who has pioneered a method of turning chicken into beetroot via a particular method of freezing.
However due to beetroot's lack of popularity outside of South Oregon, Lester has had trouble finding funding for his next project, involving the promotion of squirrel as a type of game meat.
